Since the germ cell is not opened exposing it to air, there is no oxidation and therefore, no preservatives are added or needed to keep it from going rancid. Shelf life of 3 years has been tested with no changes to the integrity of the flour. This process does not use heat, chemicals, synthetics or preservatives.
This corn is full of its natural vitamins and minerals, leading to less inflammation and gut disturbances. Keeping the germ cell intact makes crushed flour a complex carbohydrate and full of fiber. This means it absorbs slower in your system avoiding a glucose spike.
